Hostess Cupcake Homecoming

My parents have been away for two weeks, and last night I got this text:

After baking up a storm last weekend, I’d taken the week off… And there were no cupcakes left standing. Needless to say, it doesn’t take too much to coerce me into baking… Before you can finish saying cupcake, I’m already brainstorming.

I decided to finally tackle a cupcake I’ve been dying to try for a loooooong time.

I googled up a recipe, and found one I liked from Can You Stay for Dinner?.

Next I did some substitutions/changes because of what I had to work with:

CHOBANI plain Greek yogurt instead of sour cream

Honey and a tiny bit of Powdered Sugar instead of corn syrup

And voila!

I lived on the edge and tried a variety of squiggle techniques.

I mean look at that! Sooo good. The vanilla buttercream inside was really sweet, so I wanted to keep the ganache more bittersweet to counteract it. The flavors worked out to be perfect. Dare I say it was better than the original?

So good.

This triumph makes up for my mishap last weekend.. Rushing and forgot to add the baking soda to my banana cakes :( into the garbage they went. It was painful!

    these are absolutely adorable :D ! they look the part & probably taste 10x better.

    ahaha, baking mishaps. funny story. a few weeks ago, i found an unmarked bag of white, granular schtuff in my pantry, and i assumed it was sugar (in retrospect, i have no idea why i didn’t taste it…………), so i refilled my jar of sugar with the unidentified white powder and proceeded to make pumpkin bread

    turns out it was /not/ sugar, but salt, and i had added 2/3 cup of salt to my batter.
    probably the most painful mistake to this day, ahaha.

    umm..your cupcakes look AMAZING! i hope you have a bake shop or do this for a living, because you should….
